Chefs Talk: The idea behind the festival is to reveal the hidden treasures of our ancient cuisines in and around Arcot regions…Vellore, Vaniyambadi, Ambur which has been forgotten by most of us. The recipes are cooked in authentic traditional way using roasted hand pounded masalas.
No ready-made masalas are used. More over there is a saying in Tamil unave marundhu marundhu unavu, whatever we eat it should have a medicinal value. If u see the Southern spices like jeera, sombu, cinnamon, cardamom, cloves, coriander, black pepper fenugreek, turmeric, asafetida… all have a medicinal valve in it which is good for our health.
As we Le Royal Meridian which is a part of Marriot Group, per our standards should have local delicacy as part of our menu.
